I LOVE running into people in every day life and talking about how positive food choices. While at Le Peep the other day, I started talking to Hillary (hey Hillary – here’s your shout out) and I was discussing my eating habits. I love Le Peep for breakfast because they use egg whites in their omlettes, they use lean cuts of meat, have very fresh fruits and veggies, and the food is delicious! Recently undergoing a back surgery, Hillary was mentioning that she liked protein bars since they are filling and while they are and I agree that some are probably quite okay to eat, personally I try not to eat Protein bars from the store if I can help it… making your own ensures that your bars are clean and totally un-processed. Here is an excellent recipe from http://www.eatcleandiet.com/
•1cup whey or soy protein powder
•1/2c whole wheat flower
•2c rolled oats
•1/2c oat bran
•1/2c wheat germ
•1tsp sea salt
•1/2c agave nectar
•1c dark 80% chocolate
•2c greek yogurt
•1/4c avocado oil
•2tsp extra virgin olive oil
1. preheat oven 350’F. Coat a 9x13in baking pan with cooking spray
2. in large bowl combine protein powder, flour, oats, oat bran, flax see, wheat germ, sea salt, cinnamon, nutmeg and agave nectar. Stir in broken chocolate pieces.
3. In a different bowl mix the yogurt, oils, and vanilla. Mix well. Add the yogurt mixture to the dry ingredients. Use your hands to combine these well.
4. Place mix in pan. Press it down and even out the top. Bake on middle rack in oven for 15mins. Remove from heat. Let cool and cut the dough into bars. Then cook for another 15mins. Transfer to wire cooking rack and let cool.
Yield: For storage, keep in a airtight container — — Makes 20-24 bars.
